DR. ALAIN L. FYMAT is a medical-physical scientist and an educator. He is the current President/ CEO and Institute Professor at the International Institute of Medicine & Science with a previous appointment as Executive Vice President/Chief Operating Officer and Professor at the Weil Institute of Critical Care Medicine, California, U.S.A. He was formerly Professor of Radiology, Radiological Sciences, Radiation Oncology, Critical Care Medicine, and Physics at several U.S. and European Universities. Earlier, he was Deputy Director (Western Region) of the U.S. Department of Veterans Affairs (Office of Research Oversight). At the Loma Linda Veterans Affairs Medical Center, he was Scientific Director of Radiology, Director of the Magnetic Resonance Imaging Center and, for a time, Acting Chair of Radiology. Previously, he was Director of the Division of Biomedical and Biobehavioral Research at the University of California at Los Angeles/Drew University of Medicine and Science. He was also Scientific Advisor to the U.S. National Academy of Sciences, National Research Council, for its postdoctoral programs tenable at the California Institute of Technology and Member of the Advisory Group for Research & Development, North Atlantic Treaty Organization (NATO). He is Health Advisor to the American Heart & Stroke Association, Coachella Valley Division, California. He is a frequent Keynote Speaker and Organizing Committee member at several international scientific/medical conferences. He has lectured extensively in the U.S.A, Canada, Europe, Asia, and Africa. He has published in excess of 475 scholarly scientific publications and books. He is also Editor-in-Chief, Honorable Editor or Editor of numerous medical/scientific Journals to which he regularly contributes. He is a member of the New York Academy of Sciences and the European Union Academy of Sciences, a Board member of several institutions, and a reviewer for the prestigious UNESCO Newton Prize, United Kingdom National Commission for UNESCO.

Dr. Fymat's current research interests are focused on neurodegenerative diseases (Alzheimer's, Parkinson's, dementias, epilepsy, and others), oncology (glioblastoma), epigenetics & ecogenetics, and nanomedicine & nanobiotechnology. Fangyu Peng, M.D., is an Associate Professor of Radiology at UT Southwestern Medical Center and a member of its Nuclear Medicine Division. He also holds a secondary appointment in the Advanced Imaging Research Center. His clinical interests include general nuclear medicine, PET imaging, and computed tomography (CT), with a particular interest in oncology and neurology. Dr. Peng earned his medical degree at Jiangxi Medical College in Nanchang, China. He then earned a master’s degree in molecular virology at Chinese Academy of Preventive Medicine's Institute of Virology in Beijing. He earned a doctoral degree in microbiology and immunology at the University of South Florida College of Medicine in Tampa. He then completed a research fellowship program in hematopathology at Ball Memorial Hospital in Muncie, Indiana, before completing his residency in pathology at Upstate Medical University in Syracuse, New York. Dr. Peng then completed a residency in nuclear medicine at the University of Connecticut Health Center in Farmington, and in anatomic pathology at Hartford Hospital. He completed his formal training with a fellowship program in nuclear medicine and molecular imaging at the National Institutes of Health in Bethesda, Maryland.

Dr. Peng focuses his research on inherited and acquired copper metabolism disorders in Wilson’s disease, Alzheimer’s disease, and traumatic brain injury, and investigates molecular imaging and targeted radionuclide cancer therapy with copper radionuclides. His research has been published in more than 50 peer-reviewed publications. He also invented and received a patent for intracellular trapping of radionuclides by enzyme-mediated reduction.

Dr. Theo Lioutas joined McCain Foods Limited in 2011 as Chief Science and Technology Officer and a member of the company’s senior Leadership team. Theo worked closely with all the research and development teams around the world developing a recommended organizational structure that will further McCain’s innovation goals. He reported directly to the Chief Executive Officer. Previously, he was Senior Vice President of Global Research and Development for Brown-Forman, one of the world’s largest spirits companies and an organization he worked with for 12 years. Prior to Brown-Forman, Theo built his career at General Mills, Campbell Soup, Kraft Foods, Jacobs-Suchard, Tropicana/Pepsico. He obtained a Master of Science degree in Agricultural Engineering and a PhD in Food Chemistry and Food Science, both from the University of Illinois.

He is the Professor of Meat Hygiene at the Department of Food Hygiene and Control, Faculty of Veterinary Medicine, Moshtohor, Zagazig University, Benha University, Egypt. He is the Member of EUPC (Egyptian Universities Promotion Committees)at Supreme Council Universities Egypt Higher Education Committee 101 (2019-2022). He is also a Member of the Egyptian Organization for Standardization and quality: Meat Hygiene Committee.

We have discovered that the hop natural product, xanthohumol, exerts anti-obesity and anti-hyperglycemic effects in animal models of metabolic syndrome. Current research on xanthohumol, now marketed as a dietary supplement and food additive, is focused on its fate in the human body and its effects on gene regulation relevant to lipid and glucose metabolism. The Stevens lab also investigates the beneficial effects of vitamin C in the prevention of tolerance against nitrate therapy.

Research in the Stevens laboratory is aimed at determining the role and function of vitamins and dietary phytochemicals in human health and disease. Mass spectrometry-based metabolomics is a new direction in the laboratory for discovery of biological effects and mechanisms of actions.
